Glycerolysis-intertesterification of Palm Stearin and Nyamplung Oil Mixture in High Shear Continuous Stirred Tank Reactor

Glycerolysis-interesterification can be used for the synthesis of products containing high total Mono- and Diacylglycerol (MDAG). Therefore, this study aimed to evaluate rich in MDAG content using glycerolysis-interesterification method High Shear Continuous Stirred Tank Reactor (HS-CSTR). The impact varying material flow rates (6, 10, 14, 18, 22 mL/min) processing time on concentration MDAG, physical properties resulting product, consistency product quality throughout process were assessed. Furthermore, reaction was performed at a temperature 120 °C, with glycerol oil mixture mole ratio 1:5 (mol/mol), 3% NaOH, stirring speed 2000 rpm. Oil consisted Palm Stearin (PS) Nyamplung (Calophyllum inophyllum) (MC) PS:MC 80:20 (mol/mol). Subsequently, acylglycerol analyzed. results showed that rate had significant effect product. highest obtained 6 mL/min 58.56±0.91%, Slip Melting Point (SMP) 41.44±0.08 °C 42.9±0.03 °C. hardness, emulsion capacity, stability values 10.88±0.22 N, 85.2±6.93%, 88.7±5.00%, respectively. did not significantly fluctuate process, indicating achieved steady state condition.
